Yesterday, I had a get together at my home and I made lot of food which also
included Raita too. When we had all the fun and as they were departing, I was
packing the leftover food. I had lots of Raita left over.
I was going to throw this raita to clean the bowl as you know it won’t be
good for the next day. That is when my friend Aruna Yerramalla told me you
can make Uthappa with this left over Raita. I asked her how? That is how I got
this recipe and when I made them, they came out good.
I learned not to throw away the left over Raita, but make yummy Utappa.
Try it out… you will like it.
Also note that this is a healthy snack too.
Ingredients:
Raita – 2 Cups
Rice Flour – 1.5 Cups
Salt – to taste
Oil – to make Uthappams
Method:
In the raita, mix the rice flour and salt and let it ferment for 5 to 6 hours.
Take a skillet and put little oil and put 1/4 cup of mix and spread it like pan cakes and put some oil around the uthappa and let it cook.
After few minutes flip it other side and cook.
Take this in a plate and serve this with any chutney.

Special Utappam
Ingredients:
Dosa Batter – 1 Cup
Soji – ¼ Cup
Onion – 1 cut into small pieces
Green Chillies – 3 cut into small pieces
Raw Coconut – 1 Inch Piece – Cut into small pieces
Cilantro – 1 Teaspoon -Cut it into small pieces
Scallions – 1 Stem – Cut into small pieces
Carrot – ½ piece – Grated
Salt to taste
Baking Soda – 1 Pinch
Oil – To make Dosa/Utappa
Method:
In a bowl put dosa batter, soji, baking soda, salt and mix it well and keep it on counter for an hour.
Before you make Utappas, mix all the veggies.
Take a Skillet and put some oil and spread the batter like a thick dosa and leave some oil around the utappam and put the lid on and cook it until the bottom of the utapa looks golden brown.
Serve this delicious Utappam with any Chutney or Podi.

Ingredients:
Soji – 1/2 Cup
Rice Flour – 1 Cup
Maida(All Purpose Flour) – 1/2 Cup
Cooking Soda – 1/4 Teaspoon
Salt to taste
Red chillies powder – 1/2 Teaspoon
Oil – as required
Method:
Take a bowl and put all the ingredients except the oil and mix them well. Add water and make it like Dosa dough/flour.
Take a skillet and make like dosa and put the oil around the Dosa. Once he is brown, flip it to the other side and let it become brown in color.
Tip: Serve this hot Dosa with any kind of chutney.

Ingredients:
Dosa Flour – to make Dosas
Eggs – 2
Cabbage – 1/4 Cup – grated
Carrot – 1/4 Cup – Grated
Salt to taste.
Pepper to Taste
Oil as needed.
Method:
In a bowl, put salt, pepper and eggs and beat them well.
Take a Dosa Skillet and put the Dosa. On top of the Dosa, put the one egg mix and spread it like dosa. Now sprinkle the cabbage and carrot mix and put the Oil all around the Dosa and little bit on top of the dosa. Cook this on medium heat.
Turn the Dosa slowly to the other side and Cook it for a minute and serve it hot.
If you want , You can add more veggies. Just grate them and add them on.
Also, In place of pepper, you can add red chillies powder.

Ingredients:
Rice – 1/2 Cup
Chanadal – 1/2 Cup
Urad Dal – 1/2 Cup
Toor Dal – 1/2 Cup
Salt – to taste
Oil – to make Aadas
Method:
Soak all the dals in 3 cups of water for couple of minutes.
Drain the water and grind it to a paste, mix salt and keep it aside for 2 hours and then make Adas.
Take a dosa pan and put 1/2 teaspoon of oil and put the Ground paste like pancakes and flip the Ada to the other side after 3 minutes.
If you like more oil on your Ada, it is the time to put more oil and fry this Aada on the other side for couple minutes.
Serve this Aada with any kind of Chutney.

Ingredients:
Urad Dal – 1 Cup
Sona Masoori Rice – 1/4 Cup
Salt – to Taste
Oil – As required
Method:
Soak Rice and Urad Dal for 1 Hour and grind it.
Add salt and mix it well.
Take a Skillet and put 1 Teaspoon of Oil and put the battered Flour as thick pancakes and put some more oil around the Pan Cakes.
Put the lid on and cook till it looks golden brown and flip it to the other side.
Let it cook for few more minutes until it looks brown. Remember, when you flip it, do not put the lid on to cook it.
Tips: Serve it with some hot chutney. Coconut chutney is a good combination.

Ingredients:
Urad Dal – 1 Cup
Sona Masuri Rice – 2 Cups
Paraboiled Rice – 1 Cup
Flaked Rice – 1/2 Cup
Fenugreek Seeds – 1/4 Tea Spoon
Method:
Soak all the above ingredients in water for 6 hours.
Grind it to fine batter.
Leave the batter in the Dark place for couple of hours for ferment.
Once it is fermented, keep it in fridge.
Take out the Batter and Add Salt before making Dosas.
Tip: You can serve it with any chutney or Sambar.

Ingredients:
Rice – Sona Masori – 1 Cup
Toor Dal – 1/2 Cup
Green Chillies – 5
Dry Red Chillies – 2
Fresh Ginger – 1/2 Inch
Salt to Taste
Oil to Fry
Method:
Soak the first 5 ingredients for 4 hours and Grind.
Add salt and make thick Dosas.
Put the lid on while making the Dosas
Serve it with Sour Cream or Home made Curd

Zeera – 1/4 Tea Spoon
Zinger – 1/2 Inch
Salt to Taste
Method:
Soak the first 5 items from the top for 2 hours and grind it finely.
Put the salt as per your taste and then Make yummy Dosas.

Ingredients:
Rava Soji – 1 Cup
Rice Flour – 1 Cup
Maida – 1 cup
Buttermilk – 1.5 Cup
Coriander
Salt to Taste
Green Chillies – 8
Method:
Mix Soji, Rice Flour and Maida in a bowl with Salt
Grind the green chillies and curd in a grinder and put the liquid in the mix and stir well and keep the mix aside for one hour
Before making dosa’s cut the coriander leaves in small pieces and mix them with the flour and make dosas
*Tip: Better make little dosas and serve with Chutney.
