Aloo(Potato) Parota

Ingredients:

  • Potatoes   – 3 Boiled & mashed
  • Green Chillies    – 7 – Cut into small pieces
  • Coriander leaves    – 3 spoons – Chopped
  • salt
  • Ginger – 1/2 Spoon – Shredded
  • coriander Powder    – 1/4 Spoon
  • Amchoor Powder    – 1/4 Spoon 

Method:

  1. Mix everything and keep it aside
  2. Knead the flour little loosely and keep it aside for 2 hours
  3. Now make small pedas and flat it little and then put the Potato stuff and make chapathi(parota) slowly and then fry it in Pan.

You Aloo Parota is ready!

Gobi Parota

Ingredients:

  • Gobi(Cauliflower) – cut it into small pieces 1/2 cup
  • Red chillie Powder
  • Besan Flour    – 5 spoons
  • Ajwan
  • Salt
  • Wheat Flour   2 cups

 Method:

  1. First cut the califlower into small pieces and cook it till it gets soft
  2. Then in a small bowl, take wheat flour and add boiled Gobi.
  3. Don’t add any water to it
  4. And chillies powder, Ajwan  Besan salt and little bit of Oil tot he flour and mix the dough
  5. Make Parotas out of this dough.

Totakura Parota

Totakoora Parota

Ingredients:

  • Wheat Flour – 2 cups
  • Totakura    –  1/2 cup – Cut it into small pieces
  • Green Chillies    – 6-8
  • Garlic cloves    – 3
  • Vaamu(Ajwan)    – 1/2 Spoon
  • Funnel Seed    – 1/4 Spoon
  • Salt to taste
  • Oil to fry 

Method: 

  1. Cut the Totakura into small pieces
  2. Cut the green chillies and garlic into small pieces and then mix all the things in wheat flour and put some oil while mixing.
  3. Keep it for some time and then make small small portions of dough and make parotas
  4. It does not need layers in Parota
  5. Fry Parotas in oil.
 
Tip: You can serve with curry or Curd.

Spinach Parota

Ingredients:

  • Wheat Flour – 1 cup
  • Spinach    – 1/2 cup
  • Green Chillies    – 4-6
  • Vaamu(Ajwan)    – 1/8 tea Spoon
  • Funnel Seed    – 1/8 tea Spoon
  • Salt to taste
  • Oil to fry 

Method: 

  1. Grind the Spinach & Green Chillies into paste.
  2. Don’t mix water.
  3. In a big Bowl put Wheat Flour, Salt, Oil, Ajwan with the above paste and mix it very well.
  4. If needed put the water.
  5. Then leave it for one hour and then make roti and then Fry with oil.

Tip: It is very good with home made Curd.

Mexican Soup

Ingredients: 

  • Chicken Boneless – Strips – 1 Lb
  • Pinto Beans & Black Beans – 3/4 Cup
  • Orzo    – 1/2 Cup
  • Red Chilli Powder    – 1/2 Spoon
  • Cilantro    – Handful
  • Onion – 1 big
  • Carrot – 1
  • Cerely – 2 Stems
  • Tomato Sauce(puree) – 1 can(14 oz)
  • Bay Leaf – 1
  • Salt, Pepper
  • Olive Oil
  • Organic Blue Chips

 

Method:

  1. First Cut the Carrot, Celery, Onion and fry them in Olive Oil and put the bay leaf and salt & Pepper
  2. After it cooks for sometime, put the Orzo, pinto beans, black beans, red chillies powder and tomato sauce(puree).
  3. After 10 minutes(let the pasta cook for sometime).
  4. Now Put the Chicken Strips and let it cook for sometime and let it simmer for some time
  5. Now put the Cilantro

 

Tip:  Before Serving put the Corn chip pieces on top  of the soup.

Aapam

Ingredients:

  • Para boiled Rice    – 200 gms – 7 Ounce
  • Urad Dal    – 3 Spoons
  • Methi    – 1/4 Spoon
  • Coconut Milk    – 1 Cup
  • Salt
  • Baking Soda 

Method:

  1. Soak Rice a day before.
  2. Grind Rice, Dal & Methi and keep it outside(in the dark – not in fridge))for a day for ferment.
  3. Next day, mix the coconut milk and baking soda and keep it aside
  4. Put the Appam pan on Stove.
  5. Put the dove on appam pan, heat it for a while and then turn appam(just like Dosa or Utapa)

 

Tip:  Grind Coconut in warm water and take milk out of it.

Rava Dosa

Ingredients:

 
  • Rava Soji    – 1 Cup
  • Rice Flour    – 1 Cup
  • Maida    – 1 cup
  • Buttermilk    – 1.5 Cup
  • Coriander
  • Salt to Taste
  • Green Chillies    – 8

 

Method:

  1. Mix Soji, Rice Flour and Maida in a bowl with Salt
  2. Grind the green chillies and curd in a grinder and put the liquid in the mix and stir well and keep the mix aside for one hour
  3. Before making dosa’s cut the coriander leaves in small pieces and mix them with the flour and make dosas

 

*Tip: Better make little dosas and serve with Chutney.

Khubani(Jardalu – Dried Apricots)

I need to tell you about how I got this Dessert. I had this for first time at my cousin Nafisa’s place. My first impression was, “what am I getting into”. Because this dessert was looking just like ‘tamarind paste’. By now you might have noticed, I am such a sweet-a-holic. I wanted it to give it a try any way. When I tasted it, I really Liked it. From then it became my favorite. I would like to thank Nafisa for introducing me to Khubani.

You guessed it right. When ever I make Khubani, My Family and friends love it. I hope you do feel the same after giving it a try.

Jardalu

Ingredients:

  • Jardalu  2 cups
  • Sugar  – 1 cup
  • Seeds of Jardalu
  • Condensed Milk – 1/2 Cup.

 Method:

  1. Cook the Jardalu in one cup of  Water for 30 minutes on medium heat.
  2. Once it is cooled, mash the Jardalu and take the shells which contain the seeds and then break the shells and take the seeds and keep it aside.
  3. In a food processor put the Jardalu Stuff and pulse it for 2 to 4 times till the stuff becomes coarsely.
  4. Put this in a pan with Sugar, Condensed Milk and the Seeds and let it cook till it come little close(It should not be very thick or thin)

Tip: You can serve this with Ice cream or you can eat it just like it is.

You can serve it cool or at room temperature.

Green Jack fruit Curry(Panasa)

Ingredients:

  • Raw green Jack Fruit    one tin
  • Potato    – 1
  • Tomato    – 1
  • Green chillies    – 2
  • Cloves    – 4
  • Onion    1/2 – Paste
  • Ginger garlic – Paste
  • Turmeric Powder
  • Red Chillie Powder
  • Cumin & Coriander    1/2 Spoon
  • Salt to Taste
  • Oil.
 

Method:

  1. Cut & Clean the Jack fruit & Keep it aside.
  2. Peel the Potatoes and cut them into long cubes and fry them with little oil and keep it aside
  3. Now in other pan pour some oil and put cloves & onion paste.
  4. Once it is fried add ginger garlic paste and them put the jack fruit and fry it for some time.
  5. Then add turmeric, chillies powder, jeera & Coriander, fried potatoes and tomatoes and salt and put the lid on the pan and let it cook for 15 minutes.
  6. After it is done add coriander leaves and serve.
  7. Put the green chillies with onion paste
  8. Cut the potato, jack fruit and tomato in small pieces.

Moong Dal Wada

Ingredients: 

  • Whole Moong Dal
  • Green Chillies
  • Ginger
  • Salt to Taste
  • Oil to Fry 

Method:

Grind the moong dal, green Chillies and ginger. Mix the salt then make Wada and deep fry then oil until they are brown.
